Anyone have a good vegetarian or vegetable side recipes?

Hi All!
My husband and are are doing a sort of semi-vegetarian experiment next week. We are aiming to have only 2 meals next week containing meat, and I am looking for some interesting ideas. Any suggestions?
Because of hormonal issues, I stay away from soy.
We went to the markets this morning, and I have the following:
String beans, black beans, black-eyed peas, red lentils, bean sprouts
crimini and portobello mushrooms
bok choi
gai lan (Chinese broccoli)
fresh spinach
asparagus
fresh basil (Thai and Italian)
fresh cilantro
fresh garlic and ginger
green and red bell peppers, jalapeno peppers
glass noodles
yellow and red tomatoes
sweet yellow onions
avocados
cucumbers
lemons
peaches
And I already had oatmeal, quinoa, and jasmine rice in the cupboard.

Its not in your list but we love braised red cabbage. saute it in a small amount of oil, salt, and pepper. then add some cooking wine and either honey or molasses to taste. then once its cooked, remove it from the heat and finish it with some balsamic vinegar. Its excellent.0
