Berry French Toast Casserole (Individual)

I make four of these at a time and then can eat them throughout the week.

1 slice bread, cubed (Sarah Lee 100% Whole Wheat 45 cal per slice) per serving
1/2 T cream cheese (I use whole fat, but you can reduce a few calories if you use something else - 50 cal) per serving
Berries (maybe 1/8 cup so I figure 20 cal) per serving

in a separate bowl mix 2 eggs and 1 cup milk and 1/2 t vanilla. (skim milk 80 and eggs 140)

spray the dishes, put in the bread, berries and cream cheese (kind of press it over top). Then add a bit more then 1/4 cup of the milk/egg mixture - just divide it in 4ths) Let it sit in fridge for at least 3 hours, I usually do it overnight. And then bake at 350 covered.

This is like 170 calories.

but I like to add some berry sauce over the top.

Mix 1 cup water and 1 cup sugar and bring to a boil. stir and boil for 3-4 min. Add 1/2 cup of berries and simmer for 10 min. Add a couple tablespoons to the warm casserole and eat it up. I freeze this in ice cube trays and just use an ice cube on top (melted and warmed of course)

it's really easy to make and super yummy for a sweet/fun breakfast treat.

They can also be frozen before baking and then baked individually as you want them.

    I forgot to put the time on here..10 min covered and 10-15 min uncovered. It will puff while cooking and collapse when taken out of the oven. Just a heads up in case you used a low sided dish.
