Rons Spicy Vegatable Soup

Makes 14-15 1 pint servings about 135-145 calories each

What you need
8qt Stew pot
(only if canning) Large Pressure cooker and 14-15 1 pint canning jars
1 - 16oz Bag of frozen Cut Broccoli - 150 cal
1 - 16oz Bag of frozen Cut Green Beans - 180 cal
1 - 16oz Bag of frozen Cut Carrots - 175 cal
1 - 16oz Bag of frozen Lima Beans - 550 cal
1 - 28oz can of organic Whole peeled Tomatoes (cut in 3rds) - 150 cal
1 - 20oz can of Young Green Jack fruit in Brine Drained (cut to 1 inch pieces) - 60 cal
1 - 6oz can of Tomato Paste - 150 cal
2 - Tbs of Kikoman soy sauce - 20 cal
2 - Tbs of dry Ittalian seasoning - 0 cal
1 - Tbs of Daves insanity Sauce - 30 cal
1 - Tbs of granulated garlic - 0 cal
1 - Cup of uncooked Brown rice - 560
12 - Cups of water or until pot is about filled to 1 1/2 inches from the top.

In the 8 quart stew pot add all ingredients starting with frozen, then canned, then seasonings. Top off with the water. Bring to a boil (stirring occasionally)

If serving right away Reduce heat and simmer 1 and 1/2 hours. Serve (makes about 15 - 2 cups servings)

If canning Reduce heat and simmer 1/2 hour. With a Spaghetti spoon portion out the veggies into the canning jars.

IMPORTANT put 1 scoop or veggies in each jar then put the second scoop in each jar and so on. This is because the 3rd or fourth scoops will be mostly Rice and Lima beans and will be spread out proportionally among the jars. Then using a measuring cup, top off the jars with the rest of the stock leaving about a 1/3 - 3/4 inch air space on the top. Put the lids on the jars and lightly tighten them. Put them in the Pressure cooker, add enough water to half way up the jars and lock the lid. cook at 15psi for 1 hour after steam starts to hiss. Let cool overnight. Loosen jar rings and store in pantry.

When ready to eat, remove lid make sure is pops when removed. cover jar with paper towel and microwave 1 1/2 to 2 minutes and serve.

This is great for a packed lunch.
