Ive been enjoying the use of my spiral slicer these past few days and decided it was time to experiment with something.

Fresh Daikon
Raw beets
Red Onion
English Cucumber
Imported Feta cheese
Champagne Vinegar...

I made enough for five servings - so perfect for bringing along for a great mini-meal or to accompany any protein on the side. Its GORGEOUS thanks to the beautiful color of the raw beets.. and it was pleasingly healthy per the recipe builder here.
