Chicken mince Quiche

This will be enough to keep you going for lunch for quite a few days, or you could even freeze some n save it for those days your in a rush for work or school and heat it up there!
Great source of protein and is filling
if you want a bigger serving just add more quantities of the ingredients!!
Ingredients:
500g of Skinless Chicken Breast Mince
4-5 whole eggs
Mountain Bread rye wraps( for those who want some with a base)
1/4 sweet potatoe
1xzuchinni
1xcucumber
1/2 onion ( can be a spanish onion)
1-2 tablespoons of Jalnas Greek Yoghurt.
garlic
chilli
oregano
and whatever vegetables you can think of!
pre-heat overn to 180 degrees ( celsius)
in a non stick pan, lightly cook the chicken mince ( so to be safe it is cooked when the product is finished)
add all the ingredients together in a large bowl and thoroughly mix all together!
use a muffin tin to make mini quiches (great to take to work/school)
or a square like tin for one large one,
in the muffin tins spray lightly with coconut oil or olive oil ( coconut oil provides some GOOD fats into the meal)
and place mixture in about 3/4 in each section to allow for rising.
Once done place in oven for roughly 30 minutes, maybe be more depending on what you think is cooked enough.
with the larger tin, line it with 2 mountain bread rye wraps (up the sides aswell)
use egg whites to stick the joins together to ensure the loaf staying together when complete,
pour the rest of the mixture (or what fits) into the dish and fold the bits of wrap hanging on the side, over the mixture.
place in over for around 30-40 minutes.
spinkle some chilli and oregano on top
and you're all done (:
