Homemade Crispy Frito Omelet/166 Calories with Picture

A very yummy breakfast or brunch dish. This recipe is very adaptable and you can substitute any vegetables or whole eggs or add cheese. As it is written, it is gluten and dairy free.

I have a step-by-step recipe with pictures on my MFP blog, if you would like more details. I will also post the recipe for spicy, munchy homemade fritos.

Homemade Crispy Frito Omelet

Ingredients:

- 2 6 inch corn tortillas
- cooking spray (either olive oil or butter flavored)
- 1/4 cup chopped peppers (or other vegetables)
- 2 mushrooms, chopped
- 1 Tablespoon chopped green onion
- seasonings to taste
- 1 container of Egg Beaters or 2 whole, beaten eggs
- cooking spray for pan

Preparation:

1. Make fritos by cutting corn tortillas in half, and then cut each half into 1/2 inch strips. Transfer to a small bowl and lightly spray with cooking spray and set aside.
2. Chop peppers and mushrooms and set aside
3. Heat a frying pan on medium-low heat. Add frito strips to pan and cook until browned and crispy stirring often. This will take several minutes because you are using a low heat. Cooking on too high of a heat will burn them quickly. Use two spoons to to stir-fry them. When they are browned and crispy, transfer them to a bowl and set aside
4. Give your pan another spray and add the prepared vegetables and stir-fry until softened
5. Add the prepared fritos back to the vegetable mixture and stir to evenly distribute
6. Add one more spray and pour in your Egg Beaters or beaten eggs right over the vegetable and frito mixture and using a plastic spatula, evenly distribute the vegetables and fritos in the omelet mixture. Keep the pan on a medium heat and cover with a lid. Covering will help to cook the top surface and will give you a nice fluffy frittata effect.
7. When the bottom of the omelet is browned and the egg mixture is set, carefully slid your omelet onto a serving plate. Place the frying pan over the plate and flip it back into the frying pan. Make sure you use a towel or oven mitts. The pan is hot!
8. Allow to cook for a minute or two and then flip back onto the serving plate. Your "frito" side will be facing up and looking incredibly delicious.

Alternate method if using cheese:

When the frito omelet is about half cooked, sprinkle some cheese over and cover. Cook for a couple of minutes and carefully fold the omelet in half. Cook for a couple of minutes and then flip it over to finish cooking.
