Jello Mold
Here is a recipe my mom always makes.
I know the Cool Whip controversy, but I still use it once in awhile.
1- 3 oz. box of Jello Sugar Free/Fat Free Strawberry mix (can use any flavor)
1-8 oz container of Cool Whip Free
3/4 cup of hot water
3/4 cup of cold water
8-1/2 cup containers (for portion control)
1. empty jello into mixing bowl
2. dissolve with hot water and stir by hand for about 2 minutes
3. add cold water and stir by hand another 2 minutes
4. put in freezer until jello starts to stick to side of bowl (about 5 minutes)
5. beat medium speed with mixer for a few minutes
6. add cool whip mixing with mixer until creamy
7. pour into 1/2 cup containers and refrigerate about 2 hours
You can also double or triple the recipe and put it all in a bundt pan and make an actual mold. I use the 1/2 cup containers when I am making it for myself, but use the bundt when making it for a pot luck or family dinner.
If using the bundt pan, spray well with Pam and turn it upside down so access drops off.
