New to salads! Best ones to make?

I never eat salads but am going to now try!! Whats the best things to put in it and what sauce etc, is it best with chicken etc ? Thanks

    I stick to 2 very basic salads that can be served with just about any protein.

    The first (my favorite):
    - Arugula
    - olive oil
    - red wine vinegar
    - toasted pine nuts
    - shaved parmesan
    - sea salt

    Mix olive oil and red wine vinegar in a bowl (3:1 ratio). Throw in the arugula. Crush a little sea salt over it. Toss in a small handful of pine nuts and then use a vegetable peeler to shave some parmesan into it.

    We top this salad with steak, chicken, grilled tuna, salmon, etc.

    The other salad we do is a very basic spring mix with whatever toppings we have. Sometimes its just green onions and cucumbers. We use a basic homemade homemade Vinaigrette (http://www.cookinglight.com/cooking-101/techniques/how-to-make-vinaigrette-recipes-00412000067320/). Again, top with any protein.

    I throw in a ton of fresh, raw, chopped vegetables and use either 2 TBSP of Wishbone lite Italian or lite, spicy French dressing. My salads always include romaine lettuce, carrots, tomatoes, red & green peppers, edamame, sweet peas or pea pods and cucumbers.

    Sometimes I throw in some black beans (drained and rinsed) and a hard boiled egg. If it's going to be my main meal I will throw in 3-4oz. of chicken breast. Yummy.

    The best one to make is a mix of things till you see what you like. Try romaine lettuce to start with. It's best to stay in the dark green variety as you'll get no benefit from that damn iceberg. Try some dried cranberries, a dozen or two depending upon the size of salad, add some sliced almonds, red onion slices, some cukes, sliced red or yellow peppers, and if you like tomatoes like most people do, add the little cherry tomatoes, either red or yellow. Really, I add anything to a salad including sprinkling with unsalted sunflower seeds or flax seeds for the added crunch. I don't use creamy dressings anymore, or have I ever used croutons (I think the idea is weird). I pop on about 4 or 5 kalamata olives and yum, yum, it's a circus.
    Lately I toss with about a tbsp of extra virgin olive oil and a bit of lemon juice. It's pretty good stuff!!

    The best is the one with the least dressing. That's usually the killer. I don't eat salads much. I always find I need to drench it in some dressing to enjoy it. But some spinach leaves with shredded carrot, some egg, chicken, beans, and a balsamic vinegarette is pretty good.
