Veggie, but not vegan - this gluten free thing is tough isn't it?
  • The gluten free vegan gets into weight problems too. I have been a gluten free plant-based eater for three years, a gluten-free vegetarian (with eggs and dairy) for 13 years, and a vegetarian for 37 years. Going vegan and being conscious of minimizing oil in my diet allowed me to lose 35 (necessary to lose) pounds over the three plant-based diet years - from 2010 to 2013. I would not say that is the only way, but that is what worked for me.

After a very satisfying steady, slow loss over 30 months, and maintaining the loss for six months I began to gain and simultaneously stopped being conscious of oil use. I cooked with oil again, because I wanted my cooking to please others and assumed this was a good way to do that. I certainly received compliments and gratitude over my vegan dishes.... and I gained back 18 pounds. Now I am resolving to cut back again on oil and monitor everything closely through this website.

I mention this to be supportive because oil may be a hidden source of calories for others who are on this very restricted guten-free, plant-based diet. My basic method is to cook everything in broth first (Edward & Sons makes a good flavor spectrum of gluten-free, plant-based broth cubes), then use a measured amount of oil to finish the dish on my plate if I want it. I do not cook in oil, only add it the dish at the eating stage. That worked well for me and was a compromise I could live with.

I am not vegan (although I am gluten free) but one of my best friends is vegan and gluten free. She has a great blog called www.theveganchickpea.com. She has some amazing recipes on her site.
