Vegan Banana Chocolate Chip Muffins (95 calories)

These muffins are so simple that you only need three ingredients. They're low fat and contain no sugar. Preparation and cooking time is minimal.
Ingredients:
1x large ripe banana
45g of flour (I used plain but you can use wholemeal or gluten free etc.)
20g of dark chocolate chips (You can further cut calories by using diabetic dark chocolate made with artificial sweetener.)
Steps:
1) Mash banana in a bowl, by hand with a potato masher. It's ok to leave a few lumps.
2) Gradually add the flour one teaspoon at a time, stirring in between. Continue to add flour until the mixture is firm like cookie dough.
3) Add the chocolate chips.
4) Half-fill four muffin cases and place in a muffin tin. Bake in a pre-heated oven at 220C for between 10 - 15 minutes.
5) Enjoy warm or eat cold later.
Other options:
1) Replace 10g of flour with 10g of plain cocoa powder to make double chocolate muffins.
2) You could use chopped apple, raisins or dried cranberry instead of chocolate chips.

P.S. They can stick to the paper cases, so you might want to use a silicone or foil case.
