Vegan Sang Choi Bow

New here but just had to share this one I came up with last night :) I was doing badly for calories and needed a low cal dinner, but my stomach was growling and I was craving something really flavoured. So I came up with a mushroom version of sang choi bow. It's awesomely crunchy and tasty, even the non-vegan inhabitants in the household loved it!

This serves two

Ingredients:
4 large iceberg lettuce leaves
4 cups of sliced mushrooms
1 cup of sliced water chestnuts
1/2 a lime
2 tsp of fresh grated ginger
1/4 cup sliced shallots (spring onions)
1 tbsp of hoisin sauce
2 tbsp of peanut oil

1.Finely dice the mushrooms and water chestnuts and fry in the peanut oil until the mushrooms begin to release their juices.
2. Add ginger, hoisin sauce, and juice of half a lime and allow to cook over low-medium heat for five minutes, stirring occasionally.
3. Throw in the shallots, turn off the heat.
4. Serve by scooping the mushrooms into the unbroken lettuce leaves. Wrap the lettuce around the filling and enjoy!

May I suggest you keep napkins handy as this can be a messy meal :P
