Sustaining motivation with three days a week

When I did mostly cardio, it was easy to commit to doing something every day. The habit helped.
I've found 3x weekly weightlifting more challenging. Cardio gets in when it can, though I'd rather do something every day, for lots of reasons.
I tried to come up with a 2-day (4x-weekly) split, but I don't think it's workable for me (recovery issues getting in the way - legs!).
How long has it taken beginners to move from 3 days to 4-5? Mostly talking to 30s and up
Or, how do you stay in the right mindset on off days?
