Tweak this recipe

This recipe looks amazing: http://alwaysamrsforeverakidd.blogspot.com/2012/01/gluten-free-baked-oatmeal-casserole.html

It also looks like it's over 500 calories per serving and I like to keep my breakfast under 300. I don't want to alter the serving size because the volume of 1 serving looks good to me.

How would you tweak it?

For starters, I would:
Use almond milk
Use 1/2c sliced almonds instead of 1c walnuts
Cut brown sugar to 1/8c and add some nutmeg to make up for flavor
Cut the butter by 1T

I agree with the smaller amount of butter, and adding nutmeg, but I would not necessarily cut the sugar. Personally I would rather lose the chocolate chips, which adds a fair amount of calories I am sure, plus I think they are unneccesary to add. I am not an almond milk drinker so I would probably just use skim milk.

Probably cut some sugar, maybe use some Stevia instead. Less chocolate chips and use dark chocolate ones instead of milk chocolate.

I am with the other poster- lose the chocolate chips. Chocolate is unnecessary for breakfast, especially when you are looking to shave calories, though I would keep the brown sugar because some sweetness is necessary, IMO! I would also reduce the butter and use skim milk (or whatever milk substitute is your thing).

I might be too much of a chocolate lover to be able to cut them out completely lol. Maybe use half or a quarter as much, use semi sweet instead of milk chocolate for more intense chocolate taste, cut the sugar in half and the banana in half but add more fruit to get natural sugars for sweetness. I might even use water instead of any milk...when I make steel cut oats I actually like it with water better than milk.

First off, this looks delicious! Im bookmarking it to try this weekend:)

Perhaps reduce and try the mini chocolate chips? since they are smaller they will be evenly spread throughout the dish, Still giving you lots of chocolate flavor without the added calories

Id also reduce the nuts (-1/2) sugar (-1) and the butter (-1) and use skim. Bananas, chocolate chips and berries are all pretty sweet to beging with.
    Hope it turns out well!

Great idea with the mini chips! I actually just realized the original non-gluten free recipe has some tweaks suggested. If you scroll to the bottom here, you can see them: http://www.inspiredtaste.net/9928/baked-oatmeal-with-strawberries-banana-and-chocolate-recipe/

I'm going to try making this Sunday for my breakfasts for next week and do the following:
    Almond milk
    No egg
Reduce chocolate chips and use 4T mini
2T brown sugar (I think 1t per serving is plenty)
Sliced almonds instead of walnuts and reduce to 4T
2T of butter instead of 3
    Add 1t nutmeg
Use 1C blueberries instead of raspberries/strawberries

Comes in at 299 calories/serving for 5 servings
