Good morning! My family is big on pancakes. And I am constantly changing my homemade recipe just for fun. But I have this basic recipe that I have used for years and they are always gobbled up. (Of course my kids add peanut butter and syrup). I like to just put some Smucker's simply fruit spread on.

1 cup whole wheat flour
1 cup white flour
1 tbsp. brown sugar
1 tbsp. baking powder
1 egg
2 cups skim milk
1/3 cup nonfat plain yogurt
1/2 tsp. salt

Makes about 18 "smaller" pancakes. Feeds 4 to 5 people.

Here is the breakdown per pancake (checked on two different calorie counter sites)

Calories 69
Total Fat 0.5
Cholesterol 11mg
Sodium 85mg
Total Carbohydrates 13.2g
Sugars 2.3g
Protein 2.9g
Fiber 1.0g

Vitamin A 1% • Vitamin C 0%
Calcium 8% • Iron 4%

Nutrition Grade A-
* Based on a 2000 calorie diet

**** Bonus tip: These pancakes are hearty and make excellent PB&J sandwhiches. So making a double batch will not be a waste.

For those of you seeking a faster pancake... :) (I am a lazy college student)

I found this stuff today at the market, it's called Batter Blaster. It's all organic pancake/waffle batter in an aerosol type can (like a whipped cream can). It makes 28 pancakes, and for 1/4 cup of batter, or 2 pancakes, it was only 80 calories. I did some research when I got home and looked up the nutrition facts and I was very pleased. Definitely picking some of this up next time I go to the market!
