    We have been slicing zucchini and just sprinkling it with salt and baking it, and it is really good and practically no calories!

    They sound delicious! I LOVE zucchini! I'm also a big fan of eggplant, but only like it covered in bread crumbs and fried. I never thought of trying to make zucchini that way or that it would be low in calories.

    Bumping to try - and adding to my shopping list! Thanks!! I loooooove zucchini (even hide it in meatloaf, and my hubby and our oldest son eat a whole serving of veggies in their meatloaf and never know the difference..... :bigsmile: :laugh: )

    My son was so ticked off when I told him we were having zucchini - then he was ticked off that I hadn't made more! LOL! They're a hit in our family!

    For a little "less messy" preparation... put your bread crumbs in a paper bag and dip a few pieces of zucchini at a time in egg... drop them in the bag and shake.... It's like shake and bake for zucchini!
