250 Cal flour-less peanut butter and jelly pancakes
Made these this morning and they are great. Amazing low carb, high protein way to start your day. Makes two servings!
Ingredients:
2 large eggs
3 egg whites
1 banana
1 TB whole chia seeds
1 TB natural crunchy peanut butter
1 TB natural fruit preserve of choice (I used margies strawberry and guava)
Mash Banana with fork and add in egg whites and eggs.
Break up yokes and mix together with fork (be careful!)
add in chia seeds and continue to mix.
spray pan (on medium heat) with cooking spray and begin to pour two inch circles of batter on pan.
When edges are firm, flip pancakes.
When finished top with PB and J.
