I came up with this last night! Its sooooo good.

Two whole boneless skinless chicken breast
1 jar of classico spicy tomato and basil spaghetti sauce
1 Zucchini sliced
1 cup sliced mushrooms
1/2 green pepper
Whole Wheat Penne Pasta about 2 cups dry should work for two servings

Put everything but the Pasta in a crock pot and cook over night! You can add salt and pepper if you like also. Cook the pasta when the sauce is ready and enjoy. Its sooo good and the chicken literally falls apart. I cooked the pasta this morning and had enough food for my lunch and my dinner. Its so yummy. You can use whatever veggies you want, I'm sure it will still taste fabulous.

The calories are approx 225 to 300 depending on the amount of noodles and size of the chicken breast. Two servings if you do two chicken breast and two cups pasta. There should be extra sauce.

What brand of pasta are you using? I don't understand how you came up with the calories per serving if you're only making 2 servings here. To me, 2 chicken breasts and 2 cups of dry pasta would be at least 4 servings.

1 cup of dry whole wheat penne alone has 280 calories. 1 4 ounce serving of chicken breast is 110 and a regular boneless skinless chicken breast is normally about 8 ounces which is 220 calories.
280 + 220 = 500 calories/serving. And that's without even thinking about adding the rest of the ingredients you listed.

    Help! I'm confused.
  • I didn't measure the oz of chicken or the exact amount of pasta when I dished mine out. that is why I put approx. You can easily figure out the calories on your own by measuring the chicken and the pasta. I used the smaller penne noodles, it said 100 cal per cup on the box, and used smaller cut fresh chicken breast from the store that were around 4 or 5 oz each which usually run about 110 calories per breast, and veggies are low in calories. So I guess if you are using different noodles and a humongous piece of chicken then it isn't low in calories anymore LOL

If you want it to be 300 calories or less and you can't make it with low cal noodles and only have large pieces of chicken breast, cut the chicken breast in half and cook 1 cup noodles, and add more veggies, then its still filling and still low fat and low calories. Its all going to depend on how many calories you have to eat and what you buy to cook with.

I'm going to have to look for that pasta. Are you sure it's not 100 calories per cup of *cooked* pasta? Just wondering. If it's 100 calories per cup of dry pasta, that's freakin' fantastic and I can't wait to find it!
  • I think its cooked. LOL that might make a pretty big difference
