Gluten free fiber?

I have celiac disease and have to eat a gluten free diet. I have been trying to up my fiber intake, but have trouble finding foods with lots of fiber that are still gluten free and stay within my calorie limit for the day. I try to have the usual... lots of fruits and veggies, whole grain rice and rice procucts, quinoa, beans, whole grain corn products, potato, etc. I also have started eating foods with amaranth which is really high in fiber. Any ideas, suggestions, magic foods, brand ideas? Also, how do you make these foods edible, and not like eating cardboard or mush? haha thanks!

    Don't know about the fiber, but as for taste, I may be able to help. There is a brand of soups here that come in a quart box called Pacific or Imagine that have a lot of gluten free soups, no chunks in them, so they are good for adding to things for flavor. I use the chicken broth and mushroom broth and add potato starch and soy milk to thicken them for cream soups with beans and rice and tofu, or green bean bake. I have an easy bread recipe too that we really like, tastes and feels like REAL bread, instead of a dry, crumbly sponge. Let me know if you want the recipe. A lot of Hormel foods are gluten free also, you can google hormel gluten free and probably get a pdf with the list to download.
