I went to the farmers market this morning for inspiration as I have a pot luck to go to tomorrow afternoon. This is my new dish... and the bite I stole when it was done tells me it's pretty tasty!
I only used 4 tbsp of dressing so far but before I serve it I plan to add the other 2 tbsp so it's nice and moist.

Summer Veggie Salad

2 cups fresh raw corn kernals cut from cob
2 cups diced zucchini
2 cups cut raw green beans
1 cup diced yellow bell pepper
2 cups diced ripe tomatoes
2 cups diced cucumbers
1/2 cup chopped yellow onion (sauteed w/ a spritz of Pam for just a minute or two)
2 cups asparagus (sauteed in wok w/ spritz of Pam and sprinkle of salt & pepper until vibrant green)
6 tbsp Kraft - Greek Vinaigrette Salad Dressing

Mix everything together, cover with plastic wrap and let sit in fridge for a couple hours or overnight.
Enjoy.
