Elana's Pantry EASY DAIRY FREE Stuffed Green Peppers

For now the second time in my life, and two years since getting dairy back in my life, my dairy allergy is back. I made this amazing and QUICK recipe from Elana's Pantry. I changed a few things to make it better for me. I also chose to saute the onions first and add the diced green chiles to that. I set that aside and browned the meat. I added the meat to the bowl with the onion-chile mixture and added all the spices to that. I then only had to put them in the oven for 18 minutes. STUFFED PEPPER
6-8 sweet bell peppers (green, orange, red or yellow) I USED 3 GREEN FOR MINE
2 (4 oz.) cans diced green chiles
1 pound ground turkey
1 cup cilantro, finely chopped I DIDNT USE- NOT A FAN, SUBSTITUTED PARSLEY
½ cup onion, finely chopped
2 teaspoons cumin
1 teaspoon chili powder
1 teaspoon celtic sea salt
In a medium sized bowl mix diced chiles with turkey, cilantro, onion, cumin, chili powder and salt
Cut the tops off of the peppers and set aside
Place peppers in an 7x11 inch Pyrex baking dish
Stuff the peppers with the turkey mixture; place tops on peppers to close
Bake at 350° for 1 hour
Serve
