Fruit & Veggie aversion! Help!

Help! I really dislike making veggies. I want to get into the habit of eating more fruits and veggies but I am unsure of what kinds of fruits and veggies to cook or how to cook them. I eat peas and broccoli but other than that my veggies are limited. Any suggestions or recipes would be appreciated!

Eat them raw. Roasted veggies are good - toss w/a little olive oil and spices and bake until tender. Or grill them.0

Peas (snow peas, specifically) and broccoli both go great in an Asian stir-fry. Saute them in sesame oil with some bean sprouts, chopped carrots, bell peppers, a bit of garlic, and a bit of ginger. Yum yum!0

I am really not much of a fruit and veggie person either.
About the only time I eat fruit is when it's blended into a smoothie. Fortunately, it's easy-peasy to buy frozen fruit and throw it into the blender with milk and protein powder or Greek yogurt and make a great smoothie! I do that a few times a week.
I turned out to like vegetables more than I originally thought I did--I just hated the way they had been served to me. So if you haven't tried a particular food in a long time, try it again. Freshness of the item and the way it's prepared can make all the difference! For example, I happen to love asparagus, I just never knew it after getting mushy asparagus in too many restaurants and too many home-cooked meals. If you don't turn it into mush, it's actually very appealing!
Plenty of veggies are more appealing raw, too.
MFP has a Recipes category here on the message boards that's quite helpful. Google helps as well.
You can also add diced veggies to things like omelettes, stir-frys and meatloaf--the veggies don't have to be a separate meal item.0 -
Hi I have to cook food for my elderly mother and because she has macular degenerative disease she needs to eat lots of veg. For example today I used just three pans, in one I cooked beef casserole which included mushrooms, celery, carrots, garlic, mushrooms, leeks and tomato paste, in another I put on a pan of boiling water and added swede, after 5 minutes I put chopped carrots and chopped curly kale into boiling water in another pan, set the timer for 3 minutes, after the three minutes added cauliflower florets, after another minute added sprouting broccoli, green beans, after another minute added baby sweetcorn after 4 minutes the swede, after one more minute drained to water off and served. 15 minutes in all. My Goddaughter tells me that really you should eat about 12 different fruits and veg, with the passion fruit, blueberries, grapes, raspberries and blackberries I think that is 17 different fruits and veg.0

Some of my favs---but I am an evolving raw foodie---and rely heavily on veggies.
Make "tacos" You can cut up thin carrots slickes,raw red and yellow peppers, tomatoes--toss with cooked ground turkey
and scoop in a large romaine lettuce shell---sprinkle low fat-cheese--or a teaspoon of cottage cheese -yum
Sweet corn salsa----chop up zuccini, add kernels from fresh corn, cherry tomatoes, celery, honey to taste--mix..
eat with cuccumber slices
Raw green beans & carrots with your fav low cal dip
Cauliflower Mock mashed poatoes--cook caulifower---add your fav seasonings---butter garlic salt ground pepper and mash.
Spaghetti Squash linguine---separate the fiber-sphghetti-like strands. Saute lightly in a pan with garlic, olive oil, fresh ground pepper. Top with with favorite pasta sauce ---pesto---tomato sauce
Green Smoothies--taste like milkshakes!---Cut up 1 1/2 cup of raw kale-put in blender---add 2 cups of low fat or vanilla soymilk--add 1 banana--1/4 cup Strawberries or (fav berry) ice cubes--add four tablespoons of honey or agave---blend...soooo healthy! so yummy

Squash, carrots, and sweet potatoes all taste great with the same seasonings you'd associate with pumpkin pie: cinnamon, nutmeg, etc. You can warm it up with a little ginger and cumin, too!0
