Peanut Butter Baked Oatmeal

I just made this; it is absolutely DELICIOUS. I can't wait to have it tomorrow morning with sliced banana for breakfast. I used skim milk, 1/2 cup of egg beaters, light butter, and all natural peanut butter. You may want to add a few packets of splenda or truvia if you like your oatmeal very sweet.

Peanut Butter Baked Oatmeal:
3 cups quick cooking oats
1/2 cup brown sugar
1 cup milk
2 tablespoons butter, melted
2 eggs or 1/2 cup egg substitute
2 teaspoons baking powder
3/4 teaspoon salt
2 teaspoons vanilla extract
1/2 cup peanut butter
Mix all ingredients together and stir well. Spread in a GREASED 9 x 13 inch pan. Bake at 350 degrees for 20-25 minutes. If you like it a little crunchy on the top, cook for a few minutes longer. Serve with warm milk poured over top and enjoy!

Calories: Approximately 270 per serving (Calories are more accurate if you have a food scale and are able to weigh each piece to determine how much of the entire recipe you are getting. For example, the entire batch was 695g in weight. I had a 55g piece. 55/695 is .079 of the entire recipe. The entire recipe's calorie info is 2,222 calories. .079 times 2,222 is 175.5 calories. I was shooting for half a serving just so I could taste it.)

well i figure if the whole thing is 2222 cals and yo cut it into 12 pieces, one serving would be about 186 cals per serving. didnt factor in the milk though0 -
