Filling for stuffed peppers?

I would really like to try making some stuffed peppers but can't really think of what would be good to stuff them with. Any ideas?

    Goat's cheese and spring onion. Maybe some olives in there as well.

    Cous cous mixed with roasted veg (courgettes, aubergine, garlic)

    Ricotta, basil and black pepper.

    Spicy mince (beef or lamb for carnivores, Quorn for veggies).

    Herby rice with mushrooms (and bacon/pancetta if you're so inclined)

    Maybe halve the peppers and fill each side with a mix of spinach and feta, topped with blitzed pine nuts and breadcrumbs.

    I like doing a poblano pepper stuffed with rice, chorizo, black beans, and a little shredded cheese.

    Hmmm, beans.

    I might do myself a stuffed pepper with mized beans, tomatoes and a bit of cheddar later this week now.

    If you are going to cook them meat with some mint. For fresh peppers I usually do cheese mixed with tomatoes (blended).

    I always bake or grill mine. I've never tried stuffing peppers and eating them raw.

    I'm always looking for new ideas for stuffed peppers.

    I usually do, Cous cous and beetroot topped with half fat mozzarella

    or

    Chicken, garlic, red onion, a tiny bit of low cal mayo and topped with mozzarella

    My friends call me "the goat" since I prefer eating whenever possible raw veggies. I eat salads mostly without dressing :D. Anyway fresh peppers and cheese are a great appetizer. And nice to see in the plate.

    HA! I was wondering this exact same thing last week. I finally came up with Taco Peppers! Here's what I just posted to my group:

    I did do our weekly challenge this week. I decided to remake one of my favorite special meals-tacos! Long ago I switched from tacos to taco salad. I dumped the deep-fried shell for the soft tortilla. I traded the ground beef for ground turkey. This week I was going to try baking the tortilla into a taco salad type shell, but I just couldn't get my whole wheat tortilla to do it. Then it hit me. I was trying all week to find a fun recipe for stuffed peppers. What better? So my new taco salad is this:

    1 lb ground turkey
    taco seasoning
    3/4 cup water
    4 green or other bell peppers
    banana peppers, chopped to taste, jalapenos if you like too
    light cheese, shredded
    cherry tomatoes, halved
    cabbage, shredded (most use lettuce, I like mine crunchy)
    homemade salsa (no sugar) to taste

    Brown the meat, drain the fat and pat dry. Replace in pan with water and taco seasoning. Mix, bring to boil, then simmer until water is mostly evaporated. Meanwhile, slice tops off bell peppers and clean out of seeds. Serve each person one bell pepper. Stuff each pepper with meat and condiments to taste.

    I loved this. I can't say it was great manners crunching up that pepper itself at the end, but it was delish and filling. You'll definitely want the bigger and wider bell peppers for this. I am definitely keeping this recipe around for the future.

    2 large red bell peppers

    1 roma tomato

    1 lb ground turkey

    1/2 cup mushrooms

    1/4 cup chopped onion

    1/4 cup chopped green bell pepper

    1/4 cup canned tomato sauce

    2 tbsp shredded fat free cheddar cheese

    1/2 tsp dry taco seasoning mix

    1/4 tsp minced garlic

    1 tin brown lentils,
    1 onion, chopped & fried,
    200g feta
    cumin, black pepper and couscous.
    mix and stuff in pepper.
    sprinkle on grated cheese.

    we like this one as its great when travelling as it doesn't take many ingredients.

    I usually do my mom's recipe for meat loaf with some marinara sauce mixed in and on top with cheese :)

    can also cut them into strips and fill with cheese + cream cheese, then wrap in bacon and grill..oh man these are great!!
