Sub 500 calorie 'cheat risotto'

Hiya :)

This feels like a big deal to me..I made the best dinner ever, felt like I was eating something really bad for me, and yet stayed under my calorie goal!! I had 375 grams, 0.22 of a serving, with a roasted red pepper, to log 498 cals. Even a quarter of this recipe is only 527 cals. And it tastes amazing :)

Tesco Finest - Spanish Chorizo, 100 g 460 cals
Onions - Raw, 1 medium (2-1/2" dia) 46 cals
Sainsbury's - British Chicken Breast Fillet Portions, 1 container (420 gs ea.) 580
Sainsbury's - British Baby Leaf Spinach Washed Only In Spring Water, 200 g (uncooked) 68 cals
Tesco - Aborio Risotto Rice, 250 g 867 cals
Tesco - Chicken Stock Pots, 28 g 30 cals
Generic - Salad Tomato, 1 tomato (70g) 13 cals

Dry fry the chorizo so it releases its oils, fry the chicken and onion until chicken is cooked through. Add the tomato and dry rice, coating in the oils. Add the stock pots made up with 1litre of water, bring to the boil and simmer until rice is cooked through and liquid reduced.

Stir in the spinach until wilted, season with pepper, add a pinch of parsley, paprika and cayenne pepper (increases metabolism and has a nice kick!).

Serve in a roasted pepper (dry roast, 200C, 20 mins)

Yum. Carnivore boyfriend/fussy family friendly too!
