cooking for two

I am really trying to eat healthy. But I'm always cooking for two, me and husband. He doesn't care about eating healthy because he doesn't need to lose weight like I do (lucky, right?). He's the real "meat and potatoes" type. A lot of times I find myself cooking for him, then just eating a smaller portion of it for myself. So what can I cook that is healthy for me but also filling for him and tasty for us both? I would love to get some ideas for lunch and dinner, because we both work from home, so we're home for almost every meal every day.

    I know this isn't going to be what you're looking for, but it's something to consider. For the first couple of months, I was doing everything I could to cook for myself and my boyfriend (who got tired of eating healthy really fast). After a while, it was too difficult to please him and he kept asking me to make changes to recipes that would make them less healthy just to please his tastes. No sir. As soon as I hear one little gripe, I say "Hey, guess what! You don't have to eat it! You're welcome to eat it, but you're also welcome to make your own food." Sometimes he shuts up and eats it. Other times he shuts up and makes his own food. I don't care either way as long as it involves him shutting up about it. :laugh: Maybe it's not the best solution, but at this point, I'm certainly not going to be the one compromising in this situation. I've worked hard to lose the weight I have lost so far and I'm going to continue doing everything I can to be healthy. I work 50+ hours a week and I don't have time to be his personal chef. Sometimes I have time to research recipes and gather ingredients and make a dinner that's healthy and tasty and new. Sometimes I fall back on my old tasty recipe staples & that's usually when he complains -- "Oh, that's so boring" or "Ugh, I'm so tired of that." He's almost 31 years old, let him figure out how to cook for himself. :tongue:

    I like jlb's solution. That's good.

    One other thing I'd like to mention about this subject. There's no need, and actually you really shouldn't need, to cook unhealthy meals. Good meals for you don't need to be "diets foods" they just need to be healthy. Maybe less butter, broiled instead of fried, red meat is fine once in a while, but not every day (for ANYONE).

    And don't be fooled by seeing someone who isn't overweight and think automatically that they are healthy. Skinny people can be unhealthy too. My brother is 6'3" 205 lbs, nice and thin right? Well his cholesterol is through the roof, he's actually had to start eating healthy (which I find slightly amusing since he always scoffed at me for making my change, now he's asking my advice. HA!). So remember, healthy meals are good for everyone, not just those of us who are looking to drop a few lbs.
