Coconut Shrimp Veggie Saute

I made this for lunch today and loved it! Ended up splitting it between lunch and dinner...it was pretty tasty and really easy so I thought I'd share!
In a large pan, heat 1 Tablespoon of Coconut Oil and then saute an entire container of Trader Joe's Healthy 8 Veggie Mix*, after about five or six minutes, add in 3 ounces of chopped shrimp**. Cook together for another four or five minutes and then plate and top with a sprinkle of medium shredded unsweetened coconut. Delish.
Ingredients:
Trader Joe's Healthy Veggie Mix*
Shrimp**
Organic Raw Coconut Oil
Unsweetened Medium Shredded Coconut.
*If you don't have this or a Trader Joe's the mix is described as: Healthy 8 is a colorful blend of red and green cabbages, carrots, broccoli, jicama, bell peppers, radishes and celery. The veggies are chopped into smallish pieces that make them easy to eat, quick to cook and beautiful to envision. Add them into soups or stews, simmer in pasta sauces or make these vibrant, vivacious veggies the star of a spectacular stir fry.
**I just used thawed shrimp from the freezer section- they were already cleaned and cooked with tails off.
