    I tried those Eggo Pumpkin Spice waffles...and WOW! So, when I eat Eggos I make a sandwich out of it for a breakfast on the go (normally this is Eggo NutriGrain waffles with almond butter and a little syrup). I didn't think the almond butter would go well, but I thought light cream cheese would be yummy. I had none on hand, but I did have some leftover mascarpone cheese.

    Amazing discovery!
    2 Pumpkin Spice waffles
    1 tbls mascarpone
    1 tbls pumpkin butter

    WOWEE!!! So yummy and about 310 calories!

    Does anyone have a good recipe for pumpkin spice cappuccino or coffee? I tried making a mixture of truvia and pumpkin pie spice but was not good. I love Speedway Pumpkin Spice cappuccino but 8oz is 140. I usually mix 50/50 w/ regular coffee
    I use the torani sugar free pumpkin pie syrup, super yummy and 0 calories, (as long as you're ok with artificial sweeteners)
    For a cappucino I do 2 shots, 1 tbls syrup and 3/4 cup almond milk. Comes to a whopping 40 calories.
    They actually have recipes on their websites for all their syrups if you want more ideas.

    I have a really bad allergy to the added calcium in most milks, that's why I use almond, it is yummier with real milk.

    one minute pumpkin spice cake

    Ingredients
    Cooking spray
    1 egg, beaten
    1 tablespoon packed brown sugar
    1/2 teaspoon baking powder
    1 heaping tablespoon flour
    2 tablespoons pumpkin puree
    1/2 teaspoon vanilla extra
    1/4 teaspoon pumpkin pie spice (or 1/8 teaspoon cinnamon plus a pinch of nutmeg and ground cloves)
    Maple syrup for drizzling, optional

    Instructions
    Spray a ramekin, mug or microwave-safe bowl with cooking spray. Set aside.
    In a small bowl, whisk together egg, sugar, baking powder, flour, pumpkin, vanilla and spices.
    Pour batter into prepared ramekin. Microwave at 70% power for 50 seconds or until cake is cooked through. Drizzle with maple syrup.

    Pumpkin Muffins - high protein

    1.5 c vanilla protein powder
    1/2 c whole-wheat flour
    1/2 c baking splenda
    1/2 c oats
    1 tbs baking powder
    1 tsp cinnamon
    1/2 tsp ginger
    1/4 tsp cloves
    2 large eggs
    1 c Greek yogurt
    1.25 c pumpkin puree
    2 tbs canola oil
    1/4 c skim milk
    1 tbs molasses

    Mix together. Use non-stick spray on muffin tins/cups. Bake at 350 for 20 minutes, or until a wooden toothpick comes out clean.

    This is, HANDS DOWN, the world's CRAZIEST and most delicious bowl of guilt-free oatmeal!!!

    PER SERVING (entire recipe): 179 calories, 3.5g fat, 367mg sodium, 40g carbs, 11g fiber, 3g sugars, 7g protein -- POINTS® value 3*

    Ingredients:
    1 packet Quaker Instant Oatmeal, Regular
    1/4 cup Fiber One bran cereal (original)
    1/4 cup light vanilla soymilk
    2 tbsp. canned pure pumpkin
    2 tbsp. Fat Free Reddi-wip
    1 tbsp. sugar-free maple syrup
    1/4 tsp. pumpkin pie spice (or cinnamon)
    5 sprays I Can't Believe It's Not Butter! Spray
    1 no-calorie sweetener packet (like Splenda)
    dash salt

    Directions:
    Place all ingredients except for Reddi-wip in a microwave-safe bowl. Add 1/4 cup water and stir. Microwave for 45 seconds, stir, and then continue to cook in the microwave for 30 - 40 seconds. Once oatmeal has thickened, remove bowl from the microwave. Add the Reddi-wip, and stir well. Then enjoy the best bowl of oatmeal you've EVER tasted!

    Ive been drinking this all week!

    1 cup milk
    1 scoop protein powder
    1tsp peanut butter
    1/4 cup canned pumpkin puree
    1/4 cup no sugar added applesauce
    1 handful spinach leaves

    Mine came to 326 calories and I drink it in the morning while Im getting ready. mmmmm Its soo creamy, smooth and frothy!!

    1 spice cake or carrot cake mix
    1 15 oz can of pumpkin (I usually use the pie mix and not the pure)

    mix them together and it makes 18 pumpkins. 109 Calories per muffin

    Bake at 350 for 18 to 20 min.

    They are very moist and delicious my kids love them, I usually have to double the recipe so they can snack on them all week.
