Going to murder my scales

Hi, I need to lose about 2 and half stone. I do weight training, squats, sit ups etc. 3 times I week. I also cycle and do running 3 times a week. I walk the dog everyday and I will play tennis once a week. I eat healthy, I don't eat wheat, no pasta, bread etc. No dairy, No sugar. I have to for an illness I have. I eat loads of veg and protein. The problem is my weight just won't seem to budge or it will but go back up the scale. It's very frustrating and disheartening. I notice a little difference in my clothes but not loads. Is there anything else I could try or I am not doing to help?
