Steak!! Eye of round.

My hubby picked up some eye of round steak because he seen it on sale at the store. He thinks anything thats labeled steak is a tender nice juicy steak! I love the fact that its a leaner type of meat but how the heck can I cook this healthfully and still have it be tender? I'd prefer not to make a roast or have a ton of sauces added to it if possible.

    I use round steak in stir frys, fajitas, beef stroganoff, pepper steak . If you partially freeze it you can slice it very thin.

    I know you said you don't want to add a lot of sauces, but you could marinade it in a light italian dressing for awhile. That would tenderize it some. And, when you cook it, you don't really get all that flavor anyway.

    I know there are some other things that tenderize meat well, but I can't think of them. Maybe google ways to tenderize steak and it'll come up with stuff.

    I would cube it and do a quick braise in a really hot skillet with a little garlic. Then dump in some BBQ sauce, a diced onion and a bunch of cubed sweet potato, and let that simmer 'til the taters are cooked.

    The longish simmer tenderizes the meat, It's good,,,

    Eye of round is hard to perfect on the grill and if you like your steak with no pink, it's nearly impossible. However, if I cook this kind of steak I lightly salt both sides to keep the moisture in and then cook it on high heat for 3-4 minutes on both sides.

    If you are looking to tenderize, you can use citris juice or wine. They break down the meat really well.
  • To tenderize meat in my restaurant we use sliced kiwifruit. Just put it all over it and leave it overnight.

    We use it on squid etc, takes all the stringiness away.
