BIG 150 Cal Pancakes!

I was bored this morning with the crummy weather outside, and with this weekend being a refeed weekend, I wanted to make something special for breakfast! Granted, it's now 1pm so it's brunch LOL. I found a recipe for whole wheat pancakes and tweaked it a little bit to make it healthier!

2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tbsp. Splenda
1 tsp vanilla extract
2 eggs, well beaten
2 cups fat free milk
2 tablespoons plain canned pumpkin

Mix all dry ingredients together.
Mix all wet ingredients into the dry ingredients and stir just until well combined; may still be lumpy.

Drop by 1/2 cup servings into a well-oiled pan on medium-high heat. Flip when bubbles start forming in the batter.

Makes 6-7 BIG pancakes. The size of a small salad plate!
