Eggplant Puree???

I roasted several Japanese eggplants. The skins got tough, so I spooned out the insides. Now I don't know what to do with this puree. Any ideas???

Hi,
here is a great dip to use it in . Puree onion and garlic ,mix with about 50/50 the puree and low fat mayo . If you like guacamole, You will like this. Great with veggies , crackers or chips.

Put it in the food processor with garlic, spices and fresh cilantro. Dip veggies, crackers or pita chips.0
