World's Easiest Christmas Cake

Options
1lb Fruit mix (sultanas, cherries, citrus peel etc whatever you like in dried fruit)
2 cups Orange juice (use a good orange juice)
2 cups Self-raising flour

Soak the fruit mix in the orange juice for at least 4 hours. Overnight is best.

Mix in the flour. Pour into lined cake tin.

Cook in a moderate oven (350f roughly) for around 1.5 hours.

My Mum makes it every year. Very nice.
