Those are both healthy oils. Most plant oils are healthy. Use whichever you like best. Canola, sunflower, and safflower have a really light taste so I use those when I don't want to add flavor. Peanut and coconut are great for cooking at high temperatures because they have a high smoke point. Olive is great for dressings because it adds a slight taste and has a rich texture.

I'd chuck the Canola Oil distances usually reserved for Olympic hammer throwers.

I use olive oil for everything. It's really good for you!

The least processed, the better. Canola and other vegetable oils aren't allowed in my house, ever. For low-heat cooking and salad dressings, olive oil is great. For higher heat, coconut oil has a much higher smoke point.

For a bit on how canola oil is made, Mark Sisson comes through again: http://www.marksdailyapple.com/dear-mark-canola-oil/#axzz25nE43CTw

Olive oil, on the other hand? Take an olive. Squeeze it. Filter what comes out. That's all, as long as you get virgin olive oil, which you always should.

Wait, are you saying olive and coconut oils aren't vegetable oils?

You can use canola oil but you should never use olive oil for high heat cooking. I have olive oil, coconut oil (even a coconut oil spray) and peanut oil (good for high heat) that I use for almost everything. I rarely use canola oil.
