Lately I've just been doing a really lazy (I hate cooking) pasta broccoli alfredo for lunch. Ragu light parmesan alfredo, ronzoni whole wheat penne noodles + a ton of broccoli. You have have a LOT for under 400 calories.
Sorry it's not really a recipe, but it's tasty either way!0 -
Mmmmm ... Pork & Broccoli Stir Fry (Cooking Light)
Ingredients
4 cups vertically sliced sweet onion
2 cups small broccoli florets
1 (1-pound) pork tenderloin, cut into thin slices
1/4 teaspoon crushed red pepper
1/2 cup chopped green onions
1 tablespoon sugar
1 tablespoon minced peeled fresh ginger
3 garlic cloves, minced
1/2 cup fat-free, less-sodium chicken broth
3 tablespoons low-sodium soy sauce
1/2 cup chopped dry-roasted cashews
2 teaspoons dark sesame oil
2 cups hot cooked long-grain rice
Preparation
Place a large nonstick skillet coated with cooking spray over medium-high heat. Add sweet onion; cook 8 minutes, stirring occasionally. Remove the sweet onion from pan; place in a bowl. Recoat pan with cooking spray. Add broccoli; stir-fry 3 minutes. Add broccoli to sweet onion. Recoat pan with cooking spray. Add pork and red pepper; stir-fry 4 minutes or until pork loses its pink color. Reduce heat. Stir in the green onions, sugar, ginger, and garlic, and cook 30 seconds, stirring constantly. Stir in onion mixture, chicken broth, soy sauce, and cashews; cook 1 minute. Drizzle with sesame oil. Serve with rice.
OR Make a big batch of broccoli soup & freeze single portion sizes ......0 -

I think I've made it three times! It's awesome! FYI, you can go lighter on the oil and cheese and keep a serving under 200 cals.0 -

I regularly make a very simple and quick chicken broccoli.
If I have the calories, I eat it on whole wheat rice. Otherwise, I eat it plain.
Cut & wash 1.5 heads of broccoli into florets. Cut 3 stalks celery in medium sized piece, and cut 2 carrots into thin oval slices.
Put vegetables in dry frying pan and cook on medium-high for 5 minutes or so.
Add 1 cup of chicken broth and apply lid until tender-crisp.
Enjoy!0 -
I like it steamed and then sauteed in 3Tbl olive oil and 2 garlic cloves minced.0

Roast Brocolli:
Cut into small spears, toss with scant amount of olive oil and salt. Roast in hot oven (220 C) approx 20-25 minutes until some edges brown.
Variations:
Add a squeeze of lemon or some sherry vinegar. Or some grated parmesan.0 -

Broccoli Soup
Saute chopped onion, celery, and garlic in small amount of oil or non-stick pan sprayed with pam till soft.
Add 4 cups of chopped broccoli and 3-4 cups of chicken broth, add any spices you want and simmer for 20 min.
Puree in blender or use immersion blender till smooth, add some milk/cream/cheese depending how many calories you want to make it.0
