Hi all I am looking for healthy carrot cake or muffin recipes.

any cake mix add can of pumpkin 3/4 cup of water mix makes 24 muffins 80 calories each my family likes the spice cake mix would be good with the carrot cake also extra bonus laughing cow cream cheese with cinnamon to go with them even my hubby like these....for potluck night at his work the guys ask him to bring these muffins! Enjoy!

Chocolate-Covered Katie has a bunch of single-serving muffin and cake recipes, including chocolate cake, pumpkin muffin, coffee cake.... they're all super good and very healthy if you follow her ingredients. You can always sub applesauce for the oil in her recipes, and it works like a charm. Also, I make these for my husband with regular milk, and they're still great.

You will need:
1 1/2 cups oat flour
1 cup almond milk
2 egg whites
2 scoops whey protein powder
1/2 cup apple sauce
1/2 cup canned pumpkin
Pinch of salt
1 tsp. baking powder
Cinnamon
Sweetener of your choice

Mix in a blender or with a mixer and pour into muffin pan. Cook for 20 minutes at 350 degrees.

If you use a 12 muffin pan, each muffin has 90 calories, 2 grams of fat, 11 grams of carbs (2 grams of fiber and 1 gram of sugar).
