Garbanzo Bean Zucchini Loaf

Hi everyone. In my never ending quest to create healthy snacks and meals I have come up with this recipe today and thought I would share it. I am trying to bake without flour but still produce stuff that my family will eat. Hope you enjoy. I have added the nutritional value of this recipe at the bottom. It is already entered into the food database as Mack's Garbanzo Bean Zucchini Loaf. :smile:

Garbanzo Bean Zucchini Loaf

Preheat oven to 325°.

2 cups dry garbanzo beans

Chop beans in blender until consistency of flour (will have a more coarse texture)

In bowl combine the following:
2 eggs ½ cup canola oil
½ cup unsweetened apple sauce
2 cups grated zucchini 2 tsp vanilla
3 tsp cinnamon 3 tsp baking powder
2 tsp baking soda ½ cup Splenda
1 cup cooked quinoa ¼ cup ground flax

Add ground garbanzo beans and mix well. Pour into greased loaf tins. Bake for 40 – 50 minutes or until toothpick comes out clean.

Additions:
dark choc chips
Dried cranberries
Slivered almonds
Chopped pecans
Sunflower seeds
Pumpkin seeds

(1 loaf = 10 slices) these #s reflect the values of the original recipe not any additions.
