What kinda of healthy goodies can i make with my leftover canned pumpkin?

    Someone had mentioned that they put it in their oatmeal along with some pumpkin pie spice...sounded good to me!
  • mix some in with vanilla pudding and pumpkin pie spice and have a tasty treat. Also using a spice cake mix and a can of pumpkin you can make a healthy cake. I'm sure there's more but that's all I can think of at the moment!! :)

    The first thing that came to mind was a smoothie:

    Canned Pumpkin Smoothie

    Ingredients
    1/2 cup canned pumpkin
    3/4 cup milk or vanilla yogurt
    1/4 tsp. cinnamon
    1/8 tsp. nutmeg
    2 tsp. brown sugar
    4 ice cubes

    Directions
    Combine ingredients in blender and puree until smooth.
    Pour the smoothies into small glasses (this drink is rich) and garnish each with a dollop of vanilla yogurt or whipped topping.
    For a fun touch, add another pinch of cinnamon.
    This recipe originally came from "Family Fun."

    Also using a spice cake mix and a can of pumpkin you can make a healthy cake.

    You can do the same thing with a chocolate cake mix. They come out somewhere between a cake and brownies. Yummy!!!

    Pumpkin Hummus

    2 TBSP tahini

    2TBSP fresh lemon juice

    1 tsp ground cumin

    1 tsp olive oil

    3/4 tsp salt

    1/8 tsp ground red pepper

    1 (15 oz) can pumpkin puree

    1 garlic clove chopped

    2 TBSP flat leaf parsley

    Place everything in the blender and blend until smooth. Serve with pita wedges. We tried this for Thanksgiving, it was amazing!

    I used to put pumpkin in yogurt all the time (and just ate WAY too much of it). It was especially delicious for breakfast....

    1 cup of Dannon light 'n fit vanilla yogurt
    however much canned pumpkin you want
    1/4 cup of FiberOne original cereal
    --and--
    mixture of fresh or frozen berries
    --or--
    I diced apple
    Cinnamon to taste

    ...makes a DELICIOUS breakfast

    Pumpkin spice cookies

    1 box of spice cake mix (I used Better Crocker Supermoist)
    1 can of pumpkin
    2 Tblsp margerine

    Mix well. Drop tsp. size drops onto cookie sheet. Bake at 350 degrees for 10-12 minutes.

    50 calories per cookie! They don't look pretty, but they're delicious!!!

    I love to make a protein pumpkin smoothie. I add 1 cup fat free milk, 1/4 cup pumpkin and 1 scoop protein powder. I also add a pinch of pumpkin pie spice to it. I really enjoy them. :drinker:

    Best thing ever with canned pumpkin is a chocolate shakeology. Kinda sorta similar to the smoothie posted above. I just use nutmeg, cinnamon, one serving of choco shakeology, skim milk, and a banana.

    oh there are soooo many things you can make with canned pumpkin..i always have some in the fridge, but this is what i use it for alot!


    Hungry Girl Complete and Utter Oatmeal Insanity! I LOVE HUNGRY GIRL!!!!!!!!!!!!

    1 pkg plain instant oatmeal
    1/4 cup Fiber One bran cereal(original)
    1/4 cup light vanilla soymilk
    2 Tbs. canned pure pumpkin
    2 Tbs. Fat Free Reddi-wip
    1 Tbs. sugar-free pancake syrup
    1/4 tsp.pumpkin pie spice
    5 sprays I Can't Believe It's Not Butter! Spray
    1 no-cal sweetener packet
    Dash salt

    Place all ingredients except for Reddi-wip in a medium microwave-safe bowl. Add 1/4 cup water and stir.
    Microwave fro 45 sec. then mix well.
    Microwave for an additional 30-40 seconds. Allow oatmeal to thicken before removing from the microwave.
    Add Reddi-wip and stir. Makes 1 serving
    179 cal.
    3.5 g fat
    367 mg sodium
    40g carbs
    11g fiber
    3g sugar
    7 g protein
