100 calorie brownies! :D

I just made these and they are soooo rich and easy to make. Mmmmmm....they are from the book "Eat More of What you Love" by Marlene Koch, which is a book worth having for low calorie recipes. 
One Bowl Three-Bite Brownies
Serves 6-12 people
INGREDIENTS
1/2 cup bittersweet or semi-sweet chocolate chips
1 1/2 tablespoons butter
1/4 cup (or 3.5 ounce container) prune puree
1/4 teaspoon instant coffee crystals
1 1/2 teaspoons vanilla extract
1/4 cup dark brown sugar
1/2 cup granulated no-calorie sweetener
1 egg beaten
1/4 cup cocoa powder
1/2 teaspoon baking powder
1/4 cup all-purpose flour
* For cakier brownies, add one additional egg.
DIRECTIONS
Preheat oven to 325 degrees. Lightly spray a 12-cup muffin tin with non-stick baking spray.
Place chocolate chips and butter in a bowl, whisk until completely melted.
Add prune puree, instant coffee, vanilla and brown sugar; blend until smooth.
Stir in beaten egg, along with cocoa powder, baking powder and flour, whisk until lump free.
Spoon batter evenly into prepared muffin tin. Bake for 10-12 minutes or until the center springs back when lightly touched.
Cool pan on wire rack for 5-10 minutes before removing brownies from tin.

Oh and Gerber baby food is the prune puree I used. They come in packs of 2 and each pack has 1/4 cup in it, so now I got another pack left in case I wanna make it again.0 -

Oooooo, thank you for bumping this thread of mine again. Hmmmmm...I wanna bake them now but I'll end up eating half the pan myself. :laugh:0
