Lower Salt options at restaurants in the U.S.

My Hubby and I travel to Florida quite a bit to go to Disney (we are from Toronto ON, Canada) and at WDW I can request low salt options in the restaurants but when not on property I am wondering where we can go and what options we have?

NOTE: When at the "Canada" restaurant in EPCOT the servers from Canada commented to us when we asked why all the food is so salty, even the steaks, that it is apparantly custom practice to salt and pepper everything no matter of the cooking or seasoning in the dish. Don't know if this is true and I'm not trying to offend anyone but we do find U.S. food very salty. And I'm not talking any fast food but sit down, table service restaurant food.

My ankles swell like crazy when I am in the states and my doctor says the only thing that is probably causing it is the extra salt I'm taking in. :-(
