HELP

HELP!!! Starting next week it will be just me and my 3 year old son for 4 days at a time. I need to come up with some good recipes for 1.5-2 people that are fairly kid friendly and HEALTHY. Keep in mind, I still haven't quite mastered cooking for less than 6ish people.

Yeah... I am 1 of 10 kids between my mom, dad and stepmom. My dad raised me in a house with 9 kids and 2 adults. It took me about 6 years to be able to cook for my mom, me, 2 of my brothers, and 2 of my other siblings every other weekend. I have been living on my own with my husband for 5.5 years and our son will be 4 in December. I haven't really gotten the hang of cooking for just us 3. luckily my husband eats enough for 2 people. He starts a new job about 45 minutes north of here and is pretty much on call and works during the day 4 days on and 2 off. So he will be gone for those 4 days. Food is gonna be an issue.
  • its hard to go from that big of a family to such a little family sometimes i mess up and cook to much but left overs are a good thing if you get to busy the next day you can reheat and boom you have a meal.. and it saves of food and don't run out of food by the end of the month.. since i shop for the month and its helps too... my 4 year old and 9 year old last year hardly ate but this year they eat like piglets lol ... so i'm always cooking so i'm trying to lose weight and i'm trying to get them to eat healthy luckily my 4 year old will eat veg's like carrots and celery and stuff like that my snow peas i love them and so does my 4 year old so we'll have salad with snow peas and ranch dressing that's our lunch or we'll have ham sandwich with carrots and a little apple sauce or grapes and he's good to go until dinner i found that with kids that little they'll eat whatever you eat as long as they see you eat it they'll try anything and its fun if you make a game of it too..

Can you make things that you can portion up and freeze, and then you won't have to cook on some days if you can just defrost and warm up something you previously cooked? That might also give you more family time on the days hubby is home.

I just made a huge pot of all natural spaghetti sauce. There is enough there for my son and I to have at least 8 meals. I have a couple other things I will be making too. Luckily this is only for a few weeks until we move up north too. Just have to finish getting the loose ends taken care of first.
