How to add calories the good way?

I have been using MFP for a couple weeks using another site prior since July 1. My normal calorie consumption is about 1200 calories a day. Honestly, some days I don't even eat that much. And it isn't because I am neglecting or "dieting". I exercise 3 times a day. Walking in the morning (leslie sansomes 3 mile walk with weights), walk at lunch for 30 minutes, and I walk at night 45 minutes or 3 miles outside, and do a Jillian Michaels 30 day shred video. My normal extra calories earned can get up to 1000 calories. On average, I would say it is between 700-1000 calories. I don't have a HRM yet, so that number is based on the MFP database. I tend to think it over calculates, but i wear a pedometer and my normal calorie burn is the same there as MFP says. I just ordered a HRM so we will see how close it is.

Question: I am extremely scared I am not eating enough. I don't weigh myself daily or weekly. Maybe once every 2 weeks I might step on the scale but I take an "official" weight on the 1st of the month. Knowing myself, too much scale stepping can do way more bad than good. How can I add in more calories but in a good way, rather than just having a bowl of ice cream every day?

Typical Food for me each day ( I'm boring and could eat the same darn thing every day all day)

Breakfast: 1/2 cup dry old fashioned oats made with water, 1 tbsp brown sugar

Lunch: Campbell's Soup in Hand chicken and noodles, 70 calories, a piece of fruit, serving of raw veggies, 1/2 a turkey sandwich on wheat bread little miracle whip

Dinner(one example): Hamburger (lean, home grown), bun, serving of veggies, partial serving of low fat cottage cheese, mandarin oranges.

Snack: Twix Mini Ice Cream Bar (90 calories)

Any suggestions?
