Tomato Protein Soup!!!
Ingredients
Tomatoes - Red, ripe, raw, year round average, 6 medium whole
Celery - Raw, 4 stalk, medium
Onions - Raw, 2 medium
Peppers - Sweet, red, raw, 1 large
Garlic - Raw, 1 clove
Spices - Pepper, red or cayenne, 0.5 tbsp
Land O' Lakes - Garlic Butter, 1 tbsp
Generic Homemade - Chicken Broth, Fat Skimmed Off, 1500 ml (6 cups)
No Name (Superstore) - Frozen Green Peas, 1 cup
Spices - Cloves, ground, 1 tbsp
Spices - Nutmeg, ground, 0.5 tbsp
Spices - Oregano, dried, 3 tsp, leaves
Danone Oikos Greek Yogurt (Canada) - Plain, 1 cup
365 - Organic Light Agave Nectar, 3 tbsp
Cals Carbs Fat Sat. Pro. Fibre
Per Serving: 93 14 2 1 6 3
Serves about 12, 1cup servings
Rough chop all veggies and garlic and put in a pot with melted butter, heated on about medium. Add spices and cook for about 15 minutes, or until everything is nice and mushy.
Take everything out of the pot and whirl it around in a food processor for about 3-5 min, or until everything is smooth.
While the contents are whirling around, add chicken stock and agave to the pot and cook a bit. Add the contents of the food processor and cook until everything is nice and hot.
Remove the pot from heat and cool for about 30 min. Add the yogurt and stirl around until combined.
At this point you can add milk or cream to make it even more silky. Salt may also be required to taste.
