I found this cauliflower lettuce layered salad...tweaked it a bit to get rid of some of the calories and I am now addicted to SALAD -- who would have thought!
My altered version
cauliflower (eye ball the amount) - chopped up into bite size pieces
1 bag of your favorite kind of lettuce
reduced fat mayo (MAYBE 1/2 cup)
chopped onion ( I like a lot of chopped onion)
turkey bacon bits ( I used maybe 1/4 cup ...not even that..I'm kind of stingy when it comes to stuff like that) I don't want all that sodium..you need just enough of those to give it a kick
LAYER ALL OF THE ABOVE INTO A BIG BOWL
Now on top :
1/4 cup splenda ( or sugar if you stay away from splenda..but then you will need to add more calories to it)
1/4 cup fat free (parmesean shredded cheese if you can find it)..I couldn't so I used the fat free shredded mozzarella
just let that set on top and put in the fridge for a couple of hours..right before you want to eat it...stir it all up!!
OMG and this will last one more day too. I think it would be too soupy any longer than that but it didn't last that long here in the house.
*edit ps...I came up with about 8 servings at 94 - 100 calories per serving
