WHOLE EGG omelet w/ cheese, onion, peppers, and spinach.0

I love to make "crustless quiche," which is filling and pretty quick. You just prepare it for the week.
12 eggs, whisked
a few tablespoons of heavy cream
bacon, cooked or mostly cooked (or other breakfast meat of your choice)
2 big handfuls of baby spinach
1 tablespoon of coconut oil
any other veggies you may want (shredded zucchini, carrots, mushrooms, etc)
1/4 cup freshly shredded parmesan cheese
salt and pepper to taste
1. Preheat oven to 350f and grease 13x9 pan with the coconut oil.
2. Stir together eggs, cream, veggies (except for spinach), salt, pepper, and cheese.
3. Put spinach in the greased pan and pour egg mixture over it.
4. Bake for about 10 minutes. Lay bacon on top and then cook for another 10 minutes, or until eggs are currently cooked.
This makes 6-8 servings, depending on how many calories you want for breakfast!0 -
I'm going to try the quiche recipe this weekend, it might work for my early weekday mornings if I make it on a Sunday. I'll give the ezekiel bread a go and let you know how I feel about it lol.0
