Here's a nice breakfast recipe for high protein "crepes" or pancakes I learned from some book awhile back. Really easy to make too and you can adjust the ingredients to suit your dietary needs.
In a glass or small bowl mix together:
1 egg
3 egg whites
.25 to .5 cups of quick cooking or oldfashioned oats (for chewier use old fashioned. For smoother use quick cooking).
1 Scoop of Vanilla whey isolate protein powder (or protein powder of your choice)
3 tablespoons of water or more depending on the consistency you want. Can substitute coconut or almond milk if you desire.
Using a non-stick skillet, make thin crepes with your mixture. You can also cook like a pancake. Serve with whatever you want. I use no-sugar maple syrup or no-sugar added strawberry preserves.
It's a big breakfast for those that like to have a good one to start the day. The whole recipe is about 357 cals, with 46 grams of protein! This one keeps me running on full energy through the morning. Enjoy.
