Dislike cooking...

Ok so this is about more than my dislike of cooking. Its kind of a rant, but I would love ideas.
I do not like to cook, but I know it is the easiest way to make sure I am eating well and I get bored easy so it is a great way to introduce variety. So since I joined MFP I've been trying to pick out at least two healthy-ish meals a week to cook. Its not fun, but I guess its nice to have healthy tasty food. The problem is I am cooking for two, myself and my boyfriend. He'd be perfectly happy eating the same four meals week after week after week, and they are all boxed. He is super picky about food, doesn't like onion, or tomato if it resembles tomato (spaghetti sauce is ok). Doesn't like most fruits, iffy on other vegetables. He won't help me pick out meals, and I can't get honest answers out of him when he tries something I made. For example the other day I made a new sloppy joe recipe, I thought from the comments he made that he enjoyed it, come to find out today he didn't. I can't pick stuff we'll both enjoy if hes not going to be honest with me. (Guys what is with this impulse to lie about the food we ladies make?)
I want to be able to eat with him, and eat the same food, makes me feel like we are together, more often then not our appetites don't line up anyway so when we are hungry together I'd like to eat together and its easier to cook when I know its for him too.
I think I'm getting to the point where I am ready to cook only for me, but at the same time I want to help him be healthier ...and eat the same meals. Its all just frustrating. Any ideas? Ways to make cooking more enjoyable? Ways to encourage my BF to try new things? Anything would be appreciated.
