veg bolognese low calorie under 50
Options
You will need
1 large zucchini grated
2 medium carrots grated
1 onion diced
200g sliced button mushrooms
2 sticks of celery diced
2 tsp of canola oil ( any type really)
1 tsp of thyme
1 tsp of basil
1 tsp of oregano
15g of minced garlic
800g tin of tomatoes in juice
1 fresh tomato diced
Heat oil in pan then add onion & celery once onion softens
add mushroom cook for about 3 mins
Then add zucchini & carrot pop lid on and sweat moisture from the vegetables
Add thyme ,basil ,oregano & garlic mix well until everything softens
add the whole tin of tomatoes including the juice stir well
add fresh tomato let simmer for 5-10 mins an then all done
mine made 1500g so I have serves of 150g for 48 cals a serve I have mine with whole grain spaghetti and I also bought brown rice to have with it
