Help with in laws cooking

My boyfriend and I are in the process of buying a home and are staying at his parents for a few weeks until the deal goes through.
I eat fine all day long, but come dinner time, I dont know what to do. Dinner for them always consists of 90% carbs (pasta, rice, bread etc) and a few bits of meat here and there. There are hardly any vegetables either - I usually only manage to get a few pieces of broccoli.
I dont know what to do. I'm not on a low carb diet or anything, but I do try to avoid eating all my calories in carbs and I really can't continue eating pure carbs at dinner time. It's also put my calories out of whack, and I've been eating only slightly under maintenance because of all of this.
Does anybody know what I can do or say and not come off as rude or something? I've already tried cooking for them a few times before, and his mom is absolutely rude and points out a million things wrong with my cooking- can't deal with that really.

Maybe you can prepare a healthy side dish (salad, veggies, etc) instead of the whole meal. If they share it with you fine, if not, it's more for you. Hang in there, it's only a few weeks... you can do it. Congrats on the house, and your weight loss.0
