A large potato has about 250 calories. Add some yogurt or spices and you are still looking at a meal around 300 calories... and with incredible amounts of Potassium. We eat this as a meal. My DH adds some shredded cheese and I use some plain dairy free yogurt. It's actually a low calorie dinner - under 300 calories. As appetizers using tiny potatoes - again is low in calories and crispy and finger food. Definitely a crowd pleaser. Make them for the guys watching sports... they will love them.
