I know meal timing is a myth but does eating the last meal very late at night such as at 11:45PM and having breakfast very early in the next day's morning such as 7-8AM help or hinder the weight loss process? Or it doesn't mean anything?

Also what do you consider as a new day to start your first meal, start from after midnight, after you wake up or after your first meal?

Sounds like you're trying to over complicate things. Maintain a consistent caloric deficit, eat as many or as few meals when you want and profit

the link will give you info on intermittent fasting and why some people choose to follow that route.
As for when you start the clock on your day depends on when your normal wake/work time starts. If Your a night shifter then start you clock with your wake time rather than midnight like day sifters do. Many people just list their meals as Meal 1, meal 2, meal 3 etc rather than giving it a name designation.
